I really like to cook and I enjoy easy recipes, so I thought I would share another favorite with you. My kids really like this one too! I will bake this the night before and pop it in the microwave in the morning for breakfast, and we also have it for dinner often. It's great for anyone watching carbs or not...it's just plum good, and is chalk full of spinach :)
ingredients
1 dozen eggs beaten
1 8-oz package of shredded cheese (cracker barrel sharp cheddar is my favorite.)
1 pkg frozen chopped spinach ( thawed and drained) or fresh raw spinach
1 pkg of little smokies chopped
salt and pepper to taste
* preheat oven at 350 degrees. Spray casserole dish with nonstick cooking spray. Mix all ingredients together in large bowl and pour into dish. Cover with foil and bake for about an hour. I like to take my foil off the last 10 or so minutes and let it brown on top.
(this can also be cooked in a muffin pan for portion control)
side note: I have used diced ham for this, or you can use any breakfast meat you prefer. If you don't like meat, don't use meat at all, but the little smokies gave it the best flavor in our opinion. They make lower fat turkey smokies, and you may also use egg beaters and low fat cheese. My family enjoys this with salsa and low fat sour cream.
